Sicilian Pesto Trapanese, Cherry Tomatoes and Mozzarella

- 200g x Cherry Tomatoes
- 2 x 125g Buffalo mozzarella cheese
- Sea Salt
- Extra Virgin Olive Oil
Strazzanti Pesto alla Trapanese
- 50g sundried tomatoes finely chopped
- 50g roughly chopped almonds
- a good handful of fresh basil finely chopped
- 50g grated pecorino cheese
- 25ml extra virgin olive oil

Serve with freshly baked bread to mop up the juices!
Method
30 minutes before serving take out the mozzarella cheese and leave it to one side.
Make the pesto by mixing all the ingredients together in a bowl, feel free to add more almonds or basil depending on what you like!
Meanwhile, after washing well, slice the cherry tomatoes in half and place in a bowl; season with a good sprinkle of sea salt.
Leave the tomatoes to marinate with the salt for 2 minutes before tasting them to see if the tomatoes need more salt or not.
Once the tomatoes are seasoned, mix through the Pesto alla Trapanese and leave to rest and marinate for 20 minutes.
After 20 minutes serve up the Pesto alla Trapanese tomatoes and place the mozzarella on top, and serve with a drizzle of extra virgin olive oil and a fresh loaf of bread. Simple and delicious!
